Toddler breakfast Idea!

Hi everyone! It's been forever since I blogged but I have a lot going on lately :) I'm getting ready for my parents to come in a few weeks & trying to get ready for Sofia's FIRST birthday party! I can't believe my little baby is turning one....with that being said, she's a little crazy and its hard to keep up sometimes. Our furniture is arriving from IKEA today for our bedroom and I'm super excited about it. Whenever I'm really excited about something, I wait for something to go wrong...they bring the wrong furniture ect. So I'm crossing my fingers! I wanted to share a quick and easy toddler breakfast that Sofia loves and also wanted to ask what would you like to see on the blog? I need ideas! Just comment on the Facebook link or wherever and I'll be sure to blog whatever you guys would like to see :)


Okay, so for an easy toddler breakfast I just slice up bananas, then I dip the banana in some pancake batter (I just use the pre-made pancake mix where you just add water), Put them on the stove like a normal pancake and you can also drizzle a little more batter on top...and you're done! Perfect little banana pancakes :) Hope your littles love this as much as Sof does :D & DONT FORGET, I need ideas for more blogs!

Jalapeno Mac & Cheese!

Hi everyone! I'm so mad at myself that I haven't blogged in two months....seriously two months! I'll be back in Germany in 2 weeks, so I'm just going to blame it on all of that craziness :) Sofia is 7 months now & I swear it's like having a toddler, she's crawling and pulling herself up too. I have so much to do before going back, it feels like it never ends. That's the Army though, everything is always changing and nothing ever goes as planned. I like to have a plan & now I have had to re-think everything but I wouldn't change this crazy life for the world! We get to see daddy so soon! I day dream about what it's going to be like...every.single.day. I could talk forever about my life but Sofia's finally asleep so I'll just get to the point :) I wanted to share the Jalapeno Mac and Cheese I made tonight sooooo here ya go, enjoy.

Healthy Chicken Fried Rice

Heeeeey :) So, today my sister took Sofia for the night....She's the only person who takes her over night (besides gram & pop-pop)....and she's so awesome with her. I know Sofia loves it and it's also really nice to have a little break for the night! I think it's really important for new moms to have a break once and awhile. It feels good to sleep in, to talk to my husband & I even watched a WHOLE movie! I do miss her though :( but anyways, My mom & I made healthy chicken fried rice (I got the recipe from another Army wife who posted on instagram) and OMG, it's so good. Yes, I sent pictures to show Daniel what he was missing but also that he can look forward to my new cooking skills :p Here's what we did:

hey! Sofia finally fell asleep & it's 11:00....I guess she is still on Arizona time! We just got back from visiting my husbands family in Phoenix for almost a month, and yes we were LOVING the weather. I love taking trips with her and finding things to keep us busy during this hard deployment to keep my mind off of things. But now that we're back, today was one of those days where I just decided to THINK about all of the things I could be getting done, instead of actually getting doing them. But, I did successfully cook dinner for myself and my parents! Now that I'm getting the hang of this whole mommy thing and learning how to deal with deployment, I can finally say that we are half way done! So I'm starting to practice my cooking for hubby so that I can attempt to cook for him EVERY night (wishful thinking?) I made White Chicken Enchiladas with Mexican rice. (yes, my husband is Mexican & I never cook Mexican food) But hey, you gotta start somewhere right? I just went off of how I saw my mother in law cook it, so with all of that being said....here's what I did:
