Healthy Chicken Fried Rice

Heeeeey :) So, today my sister took Sofia for the night....She's the only person who takes her over night (besides gram & pop-pop)....and she's so awesome with her. I know Sofia loves it and it's also really nice to have a little break for the night! I think it's really important for new moms to have a break once and awhile. It feels good to sleep in, to talk to my husband & I even watched a WHOLE movie! I do miss her though :( but anyways, My mom & I made healthy chicken fried rice (I got the recipe from another Army wife who posted on instagram) and OMG, it's so good. Yes, I sent pictures to show Daniel what he was missing but also that he can look forward to my new cooking skills :p Here's what we did:

what you'll need:



2 BONELESS SKINLESS CHICKEN BREAST
2 EGGS
CARROTS
BROCCOLI
LOW SODIUM SOY SAUCE
INSTANT BROWN RICE



First, we sliced the chicken into pieces and we did pretty big pieces but you can cut them however you'd like :)


Then, We chopped up the carrots and broccoli but we didn't use too much because I'm not a huge fan, in the pictures you can see exactly what kind we used.



We started cooking the chicken, rice and veggies all at once.


After we let the veggies cook all of the way, we cracked two eggs onto the skillet and scrambled them into the carrots and broccoli.



When the veggies, chicken and rice are done cooking..just add them all together and add soy sauce! really easy and sooooo good...enjoy :)
