Jalapeno Mac & Cheese!

Hi everyone! I'm so mad at myself that I haven't blogged in two months....seriously two months! I'll be back in Germany in 2 weeks, so I'm just going to blame it on all of that craziness :) Sofia is 7 months now & I swear it's like having a toddler, she's crawling and pulling herself up too. I have so much to do before going back, it feels like it never ends. That's the Army though, everything is always changing and nothing ever goes as planned. I like to have a plan & now I have had to re-think everything but I wouldn't change this crazy life for the world! We get to see daddy so soon! I day dream about what it's going to be like...every.single.day. I could talk forever about my life but Sofia's finally asleep so I'll just get to the point :) I wanted to share the Jalapeno Mac and Cheese I made tonight sooooo here ya go, enjoy.

-4 oz. of Cream Cheese
-2 tablespoons of Butter
- 1 cup of shredded Jalapeño Cheese
-3/4 cup of shredded Pepper Jack Cheese
-1 or 2 Large Jalapenos
-2 cups of Pasta Noodles
-Bread Crumbs
Directions:
1.Boil the pasta until al dente (they will finish cooking in the oven) drain & return to the pan you boiled it in and set aside.
     2. In a medium saucepan over medium heat, melt the butter.
     3. Add Cream and Cream Cheese & whisk constantly over medium heat for about three minutes.
     4. Continue stirring with the whisk and slowly pour in the cheese.
5.Whisk frequently for a little to make sure the sauce is all stirred up but make sure not to let it boil!
6.Add jalapeños over the pasta & pour the cheese sauce on top of pasta and toss gently until coated.
7.Add the bread crumbs on top and cook!
8. Bake at 350 degrees Fahrenheit for about 20 minutes or until bubbly and golden brown.
