hey! Sofia finally fell asleep & it's 11:00....I guess she is still on Arizona time! We just got back from visiting my husbands family in Phoenix for almost a month, and yes we were LOVING the weather. I love taking trips with her and finding things to keep us busy during this hard deployment to keep my mind off of things. But now that we're back, today was one of those days where I just decided to THINK about all of the things I could be getting done, instead of actually getting doing them. But, I did successfully cook dinner for myself and my parents! Now that I'm getting the hang of this whole mommy thing and learning how to deal with deployment, I can finally say that we are half way done! So I'm starting to practice my cooking for hubby so that I can attempt to cook for him EVERY night (wishful thinking?) I made White Chicken Enchiladas with Mexican rice. (yes, my husband is Mexican & I never cook Mexican food) But hey, you gotta start somewhere right? I just went off of how I saw my mother in law cook it, so with all of that being said....here's what I did:




I bought:
- Fiesta Sides Spanish rice (I know, I know...I'm lazy but it was really good!)
-Chi Chi's Salsa
-Ortega Diced Green Chiles
-Chi Chi's Flour Tortillas
-Cream of Chicken soup OR Cream of Mushroom (not in the picture, oops.)
-Rotisserie Chicken
-Mexican Blend Cheese

First, I put the can of Cream of Chicken on the stove & added half a can of the Green Chiles to the soup and let that cook. While that was cooking, I also put the rice on and let that cook. Oh and remember, not everything is in the picture!


While they were both on the stove, I peeled apart and shredded the chicken then sprinkled cheese on the chicken, added them into the tortillas (folded them over like a soft taco) and sprinkled more cheese on top of the tortillas.

After the Tortillas had a little bit of golden brown and the cheese was melted (you could also sprinkle the cheese and then put in the microwave quick) (that's what I did, shhhhh) then just plate everything and drizzle the soup with chiles over them! I put salsa on the side, with sour cream :)

It's SO easy and SO good :)
